These milkshakes have a rich and creamy texture. Plus a wonderful spiced flavor from the chunks of Biscoff cookies and swirls of cookie butter! No need to worry if you do not have an ice cream maker, I have different options for making these delicious shakes!

If you have never tried a Boozy Cookie Butter Milkshake, you are missing out! I first discovered cookie butter ice cream at a local ice cream shop at the beach near my house. I fell in love with the flavor and had to make my own creation, a boozy cookie butter milkshake recipe!
What is Cookie Butter?
Cookie butter is basically ground up cookies in a jar. It is smooth like the consistency of a nut butter. It is made from the speculoos cookie which is a spiced shortcrust cookie that is popular in Europe, very similar to gingerbread.
How to make a cookie butter milkshake?
There are a few ways you can make these milkshakes. You can make the ice cream from scratch, like I did. The recipe I have is very easy and my stepdaughter Mia loves helping me make ice cream with my ice cream maker. Of course she just eats the cookie butter ice cream and the boozy shakes are left for the adults.
If you are wanting to make this and you don't have the time or an ice cream maker you can simply buy cookie butter ice cream at the store.
The third option if you can not find cookie butter ice cream is to buy a good quality vanilla ice cream and add crushed Biscoff cookies and cookie butter. Problem solved!
Once you have the ice cream, it's time to make the speculoos cookie butter milkshake! This is so easy and a lot of fun especially when you are craving a sweet treat! Add 4 cups of ice cream to a blender. I know it seems like a lot but you’ll be surprised when you blend it won’t fill huge glasses. Then pour in your milk and the vanilla vodka. Blend for a few seconds and pour the milkshake into serving glasses. This is enough for 2 small milkshakes, but you can divide it into however many you like! Then add the toppings, whipped cream and more crushed cookies on top!

Cookie Butter Milkshake
Ingredients
Cookie Butter Ice Cream
- 2 ½ cup whole milk
- 2 cups heavy cream
- 1 cup sugar
- 1 tablespoon vanilla extract
- pinch salt
- ⅓ cup cookie butter
- 10 Biscoff cookies, crushed
Cookie Butter Milkshake
- 4 cups cookie butter ice cream
- ¼ cup milk
- 4 ounces vanilla flavored vodka
Milkshake Toppings
- whipping cream
- 4 Biscoff cookies, 2 crushed for garnish
Instructions
Cookie Butter Ice Cream
- If making homemade cookie butter ice cream in a medium sized bowl mix together milk, heavy cream, sugar, vanilla extract and salt. Add milk mixture to an ice cream maker and turn on for 20 minutes. *see notes
- After 20 minutes check ice cream. At this point it should be thickening to about soft served consistency. Crush biscoff cookies to small crumbs and add to ice cream machine while it is on.
- Measure cookie butter and while machine is on drop small spoonfuls so that cookie butter doesn’t stick together in one giant clump.
- Continue to run the ice cream maker for about 5 minutes. Transfer to the freezer to continue to harder for at least an hour before making milkshakes. *see notes
Cookie Butter Milkshakes
- Add 4 cups of icecream to blender with milk and vanilla vodka. Blend for a few seconds until smooth consistency. I try to only do a few seconds so I still have some good size chunks of cookie! Pour into serving glasses.
- Decorate milkshakes with whipped cream and biscoff cookie crumbs! Enjoy

*If you make homemade cookie butter ice cream, this recipe will make extra ice cream.
