This white chocolate bark is such an easy recipe. It requires minimal ingredients with practically no cooking and can be made well in advance. It is perfect as gifts for neighbors, friends or coworkers around the holidays. It’s also a fun treat to have at parties for anyone wanting just a small bite of something sweet! Key Ingredients
There are so many different variations of this recipe. You can use different nuts or dried fruit that you prefer. Have fun and create your favorite flavor combination.
white chocolate melting wafers- you can use white chocolate chips too, but I love how easily these Ghirardelli wafers melt!
macadamia nuts- many people use pistachios but I love macadamia nuts. You can mix it up and use different nuts or even a combination of your favorites.
dried cranberries- any dried fruit can work, you can make this with dried cherries, raisins or blueberries. I love the festive color of the cranberry. It's perfect for the holidays!
sea salt (optional)- white chocolate is very sweet so I like the balance that a little sprinkle of salt gives the candy.
Step-By-Step Instructions
My recipe for white chocolate bark is so easy anyone can make this! Plus it only takes 5 minutes to prepare, making it great for a last minute dessert or gift during the holidays.
Start by melting the wafers in the microwave. You will need a microwave safe glass bowl and microwave in 15 second intervals stirring in between.
By stirring the chocolate it will heat more evenly. Using the microwave method to melt chocolate is much quicker and easier than using a double broiler. It will take about 1.5 minutes for the chocolate to be completely melted.
Once the chocolate is completely melted, stir in the macadamia nuts and cranberries. I like to reserve a few cranberries to sprinkle on the top to get that bright pop of color.
Line a baking sheet with parchment paper. Spread the cranberry bark in an even layer using a spatula. Sprinkle with a little sea salt. This will not be enough to cover the entire tray and it does not need to be in a pretty shape. After this hardens we will be cutting into small bite sized pieces.
Place the baking sheet in the refrigerator for 30 minutes. This will quickly harden the chocolate. Once the chocolate is firm, it will easily lift off of the parchment so that you can transfer to a cutting board. Use a sharp knife to cut in small pieces.
Storage
White chocolate cranberry bark candy keeps for up to two weeks is stored properly. It is best stored in an airtight container in the refrigerator, which makes this the perfect make ahead gift to have ready for unexpected guests or a last minute get together.

White Chocolate Cranberry Bark
Ingredients
- 10 ounces white chocolate wafers
- ½ cup dried cranberries
- ½ cup macadamia nuts
- pinch sea salt
Instructions
- Start by placing melting chocolate in a microwave safe container.
- Microwave on high for 15 second intervals, stirring in between. Should be completely melted within 1.5 minutes. This can vary on your microwave.
- When white chocolate is completely melted and smooth remove and add cranberries and macadamia nuts.
- Stir well to coat everything in chocolate and pour onto parchment paper. With a spatula spread thin. Don’t worry if it is not a perfect form. It will not fill cookie sheet. This will be chopped into irregular pieces.
- Sprinkle with sea salt.
- Place tray in refrigerator to chill about 30 minutes. Remove from refrigerator and break or chop into small pieces.
