Equipment Needed
bowl- any medium size mixing bowl will work.
spatula- will help smooth the cream cheese in an even layer over the tortilla.
knife- a sharp knife to cut the tortillas into the pinwheels.
Key Ingredients
cream cheese-this really helps hold the pinwheels together. Make sure to allow it to come to room temperature before trying to stir in the other ingredients.
cheddar cheese- I like the contrast of the sharp cheddar cheese and the cream cheese but feel free to use your favorite cheese.
dried cranberries- adds a little sweetness to the cream cheese spread.
jalapeños-this is completely optional but I love the combination of the sweet cranberries and the spicy jalapenos.
chives- adds a mild onion flavor. You could also use very finely minced red onion or fresh green onions.
sliced deli turkey- thinly sliced deli meat is the best option for the pinwheels. I pick a neutral flavored turkey or rotisserie chicken so the flavor doesn't compete with the cranberries.
tortillas- use the larger size flour tortillas. They come in different flavors. I used a whole wheat variety. I would not use a corn tortilla because they can rip easily.
romaine lettuce- any green leaf lettuce will work well in the sandwich wraps.
Step-By-Step Instructions
Add the softened cream cheese to a bowl and use a spatula to mash the cream cheese so that it is easily spreadable. Stir in the cheddar cheese, dried cranberries, chives and jalapenos.
Once mixed add a ⅓ of the cream cheese mixture to the tortilla and use the spatula to spread into a thin even layer over the top of the wrap.
Add the romaine lettuce leaves and the turkey slices to the tortilla.
Carefully roll the wrap keeping all of the ingredients tucked inside. To help the pinwheel stay closed add a little cream cheese to the edge to stick the wrap together.
Cut the wrap into pinwheels with a serrated knife. It will make it easier to get clean cuts. Repeat with the remaining ingredients.
Make Ahead
Turkey pinwheels are perfect to make ahead. Wrap tightly in plastic wrap and store in an airtight container for 2-3 days.
Expert Tips
- Make sure the lettuce is very dry after you wash it. Use a paper towel to remove excess moisture to prevent the tortillas from becoming soggy.
- Only make these turkey pinwheel sandwiches a few days in advance to keep the ingredients fresh.
Filling Ideas
Use your favorite deli meat. Deli ham is also a great choice. You can also make a a blt pinwheel by adding crumbled cooked bacon or bacon bits and tomatoes.
A pesto turkey pinwheel with mozzarella cheese and sun-dried tomatoes could also be a new recipe variation to try!
Buffalo chicken pinwheels with hot sauce and rotisserie chicken is another great idea!
