During my first trip to Disney’s Epcot my husband and I stumbled upon an interesting drink. Disney created passion fruit coconut margaritas, a unique twist to a classic cocktail. If you have never been to Epcot, the idea behind this attraction is the different countries that you can visit in what they call the World Showcase. It’s fun to stroll around and sample different food and beverages featured from countries all over the world. The Mexico region is a very popular spot because of their creative margaritas. You may have to wait in line for one of these yummy concoctions, but I assure you it is worth the wait! The passion fruit coconut margarita was so unique and different that I had to try my best to duplicate this drink.
What is in a margarita?
Traditionally a margarita is tequila, lime juice, orange liquor and simple syrup, however there are countless variations of this popular drink. This version I recreated from Disney has a unique creaminess from the coconut with a hint of tartness from the lime juice. What really sets this drink apart from the traditional margarita is the cinnamon sugar rim! The sweetness was a perfect pairing with the passion fruit
Where to find passion fruit
I went on a quest to find the right passion fruit juice for this cocktail. At first I bought a juice blend and it was more grape juice than passion fruit. I thought finding the fruit itself would be the solution, however after visiting several stores with no luck I realized it must be a difficult fruit to find. I almost gave up when I decided to search the Web for passion fruit juice and found Goya sold a frozen 100% pulp. This was exactly what my drink needed! It only needs to be defrosted before making the drink.
How to make the perfect margarita?
Making cocktails is very quick and easy. You want to make this in the correct order to avoid ice melting and watering down the beverage. To prep get all of your supplies ready. Make the cinnamon sugar rim. Then measure and add the ingredients to the shaker. Lastly, add the ice to the shaker and the rimmed glasses. Vigorously shake to incorporate the different fruit juices and liquor together. Strain over the ice filled glasses.
This drink is so much fun to make at home. Impress your friends and serve it at your next cocktail party!

We became addicted to passionfruit juice and syrup on a trip to Australia and New Zealand, where it is a normal fruit with breakfast and in sorbets. So yummy!
I was happy to see Goya made a passionfruit juice, and when I found this recipe that included coconut milk,I knew I had to make it. I didn’t change a thing to this recipe and the cinnamon sugar rim is a nice touch.
