Crispy chicken is always a family favorite but not only is deep frying messy it is also not a nutritious way of cooking. So skip the classic fried chicken and try this panko breaded chicken recipe. This chicken bakes in the oven to crispy perfection without the need of lots of oil.
This recipe is so versatile too! You can pair it with so many different side dishes. Dunk the tender chicken breast in your favorite dipping sauce. Or add marinara for an easy Italian dish. Panko chicken is always a great option for a quick and easy dinner!

Equipment Needed
baking tray- preferably a rimmed baking tray that can be fitted with a wire rack. This will keep the chicken elevated so that it can get crispy on all sides.
Key Ingredients
chicken breast- are easy to cut in half to make chicken cutlets. Or if you want to save even more time you can buy thin chicken cutlets at the grocery store.
panko breadcrumbs- are a Japanese style breadcrumb that is made from crustless loaves of bread that are steamed and then dried. This results in a larger and flakier breadcrumb that gives food a crispier texture.
Step-By-Step Instructions
Preheat oven to 425° F.
Cut two chicken breast through to make chicken cutlets. Season the chicken cutlets with salt and pepper.
Set up your dredging stations by adding the egg, half and half and hot sauce to one bowl. Then add the panko crumbs with oregano, onion powder and garlic powder to a separate shallow bowl.
Dip the chicken in the egg mixture first, coating well on both sides.
Next dip the chicken into the panko bread crumb mixture. Press the cutlet into the panko crumbs to help get the crumbs to stick on both sides. Place the chicken in a single layer on a wire rack fitted over a cooking tray. This will help the panko chicken get crispy. If you do not have a wire tray place a sheet of aluminum foil over the baking sheet and flip the chicken half way through the cooking process.
Spray generously with olive oil spray and bake in the oven for 10-12 minutes or until the internal temperature with a meat thermometer reads 165° F.
Serving Suggestions
Serve panko chicken breasts with your favorite dipping sauce. Usually we use honey mustard and barbeque sauce.
Pair this with an easy salad like my favorite strawberry walnut salad or creamy potato salad.

Substitutions And Additions
chicken cutlets- use your favorite cut of chicken. Chicken tenders or boneless skinless chicken thighs will also work well with this recipe, but remember to adjust the cooking time.
Storage And Reheating
Store any leftover chicken in an airtight container in the refrigerator for 3-4 days. It is best reheated in the oven to crisp the panko mixture again. The microwave will give soggy results.

Easy Crispy Oven Baked Panko Chicken Recipe
Ingredients
- 2 boneless skinless chicken breast
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 large egg
- 1 teaspoon hot sauce
- 1 tablespoon half and half or milk
- 1 cup panko
- ½ teaspoon oregano
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- olive oil cooking spray
Instructions
- Preheat oven to 425° F.
- Cut the chicken breast in half to make 4 thin chicken cutlets. Season chicken with salt and pepper.
- Set up a dredging station by whisking the egg, hot sauce and half and half together in a shallow bowl.
- In another shallow bowl mix the panko, oregano, onion powder and garlic powder.
- Dunk the chicken into the egg to coat all over, then press the chicken into the panko mixture coating both sides with the crumbs.
- Place the breaded chicken cutlets on a wire rack over a baking tray. Repeat with remaining chicken pieces. *see notes
- Spray chicken generously with olive oil cooking spray.
- Bake in preheated oven for 10-12 minutes or until chicken is cooked through and chicken is golden brown.
