Instant Pot chicken fajitas are unbelievably easy to make, delicious and nutritious! All you need to do is cut your chicken and vegetables into strips, add it to the Instant Pot along with some seasoning and dinner will be done in just 20 minutes.
Let me tell you when this is cooking it smells incredible! The spice blend along with the peppers, onions and garlic make such a fragrant and flavorful meal.
If you are following a low carb or gluten-free diet, look for those tortilla options at the grocery store. There are so many different options available and you can even use lettuce wraps if you like.

Equipment Needed
Instant Pot Duo- is not just an electric pressure cooker but a multi-purpose appliance. However, most people love its pressure cooking feature because of its quick cook time. By cooking food at high pressure and trapping the steam inside the machine, food cooks much quicker than using the stove top method.
Key Ingredients
chicken breast- boneless skinless chicken breast are easy to slice into thin strips for the fajitas.
peppers- use any color of bell peppers that you like. I had a bag of tri color peppers so I used 3 different colors. Green bell peppers are actually more bitter in flavor while orange, red and yellow bell peppers are actually sweeter.
chicken taco seasoning- I know these are fajitas and not tacos but this seasoning mix is one of my favorites and is amazing for so many dishes. It isn't overly spicy but has great flavor! Give it a try or use a tablespoon of your favorite fajita mix.
Step-By-Step Instructions
Cut the chicken, peppers and onions into thin strips and add to the bottom of the Instant Pot. Mince the garlic and add that to the mixture.
Juice the lime into a measuring cup. Add the Worcestshire sauce to the lime juice. If it is not quit a ¼ cup, add water to make sure there is a ¼ cup of liquid. Add the lime juice mixture to the pot. This is important because there should always be enough liquid in your Instant Pot when using the pressure cook feature. This will prevent the burn notice from coming on.
Sprinkle the chicken and vegetables with a tablespoon of chicken taco seasoning. Use tongs or a fork to toss everything around and coat with the spice mixture.
Secure the lid on the Instant Pot and turn to lock. Select the Pressure Cook button and set cooking time for 4 minutes. I know it seems impossible for chicken to cook in 4 minutes, however it will actually start cooking as it comes to pressure which may take about 10 minutes.
When the Instant Pot reaches pressure it will begin to count down the 4 minute time that you programmed. When it has finished cooking it will beep and at this point automatically begins a natural steam release. It is important that you do the quick release by using the handle of a wooden spoon or spatula and turn the steam release valve to venting. Stand back a little when you do this because it will let out a lot of hot steam.
If you do the natural release the veggies will continue to cook and be complete mush. So make sure you do the quick release.
Instant Pot Fajita Topping Ideas
You can eat these just as they are, because the tender chicken and veggies are so flavorful and absolutely delicious, but here are a few of my favorite toppings!
- avocado- cut a ripe avocado into thin slices to add to the fajitas.
- cheese- a good sharp cheddar cheese is always yummy but you can also use cotija.
- sour cream-or Greek yogurt are a nice creamy addition.
- salsa or pico de gallo- adds extra flavor especially if you get a spicier variety.
- guacamole- I love a good creamy guacamole with my fajitas! Try this homemade guacamole for a wonderful fresh flavor.
- lime wedges- a little squeeze of lime juice gives a nice tangy flavor.
Substitutions And Additions
seasoning mix- use your own fajita seasoning mix or try my flavorful chicken taco seasoning blend.
onion- I prefer red onion for my Instant Pot fajitas but any type of onion will work.
chicken breast- you can use chicken tenders or boneless skinless chicken thighs for this recipe.
tortillas-use flour or corn tortillas to build your fajitas. Or if you want to make this into a bowl recipe use white or brown rice for the base. For a low carb version you can substitute cauliflower rice.
Storage Recommendations
Store any leftover chicken fajitas in an airtight container in the refrigerator for up to 4 days. It is best to store the chicken and peppers separate from the tortillas and toppings.

Easy Instant Pot Chicken Fajitas Recipe
Equipment
- Instant Pot
Ingredients
- 1 and ½ pounds chicken, cut into thin strips
- 3 large bell peppers, any color cut into strips
- ½ large red onion, cut into large pieces
- 1 clove garlic, minced
- juice of 1 lime
- 1 tablespoon Worcestershire sauce
- water (see notes)
- 1 tablespoon chicken taco seasoning (see notes)
- flour tortillas, corn tortillas or rice
- toppings, sour cream, cheese, avocado or salsa
Instructions
- Cut the chicken, bell pepper and onion into thin strips. Mince the garlic. Add everything to the bottom of the Instant Pot.
- Squeeze the lime juice into a measuring cup. Add the Worcestershire sauce. If needed add enough water to make sure there is a ¼ cup of liquid. Pour into the Instant Pot.
- Sprinkle 1 tablespoon of chicken taco seasoning over the chicken, peppers and onion.
- Stir to coat the ingredients with seasoning.
- Set the Instant Pot to and time for 4 minutes. Make sure the valve is set to The Instant Pot will take several minutes to come to pressure (mine took about 10 minutes). Once it pressurizes it will begin to count down the 4 minutes.
- When the time is up use a long handled spoon or spatula to release the pressure from the steam release valve. DO NOT do a natural release because this will overcook the vegetables and make them mushy.
- Use a slotted spoon to remove the chicken and vegetables from the Instant Pot. There will be a lot of liquid that you can discard.
- Plate the fajitas on flour tortillas and top with desired toppings.
