    Cantaloupe Smoothie with Mint

    A crisp cool Cantaloupe Smoothie with Mint is refreshing on a hot summer day.  Make this delicious fruit smoothie in just 5 minutes with only 4 ingredients!

    During the summer I can’t get enough fresh melon!  I love watermelon, cantaloupe and honeydew but sometimes these melons are so large we can’t eat them fast enough before they spoil!  Because wasting food is one of my biggest pet peeves, I started freezing some of the surplus of my favorite summer fruits.

    I am constantly experimenting with different smoothie recipes like my favorite Oat Milk Smoothies. I know most of us just think of strawberries and bananas for smoothies but you can always make smoothies with all types of fruit and vegetables, even cantaloupe.  This combination of frozen cantaloupe with mint is so refreshing, but by freezing my cantaloupe I can now drink my melon smoothies even after melon season!

    Can cantaloupe be frozen for smoothies?

    Freezing cantaloupe is easy and a great way to save extra melon when you have more than you can eat.  The best way to freeze cantaloupe is to cut it away from the rind.  Remove any seeds and then cut the melon into bite size chunks.  Add the cantaloupe to a freezer safe bag and freeze for up to a year!  It may not be ideal to eat the melon like we would fresh in a fruit salad, but it blends perfectly for smoothies and other drinks.

    Ingredients in a cantaloupe smoothie?

    • frozen cantaloupe
    • almond milk- can substitute coconut, oat or skim milk
    • mint
    • honey- can substitute agave or maple syrup

    How to make a cantaloupe smoothie

    The only equipment needed to make this cantaloupe smoothie is a blender. I’ve completely fallen for my Vitamix, which was a present from my mom.  It blends frozen fruit so smoothly making the perfect smoothie consistency!

    Add all of the ingredients and blend till smooth.  It’s best to pulse a few times first and start on a low setting at first.  This will help break up your frozen cantaloupe.  Add to glasses and enjoy immediately!

    Ingredients

    • 2 cups cantaloupe, frozen
    • 2 cups almond milk
    • 1 small sprig of mint, plus more for garnish
    • 1 teaspoon honey

    Instructions

    • Add all ingredients to blender and pulse several times to break down the frozen cantaloupe chunks. Blend until smooth.
    • Pour into two serving glasses and enjoy immediately.
