Strawberry Yogurt Bites
Ingredients
- 2 cups strawberries, diced
- 1 and ½ cups Greek yogurt (I use a 5% milk fat for a creamy texture)
- 2 tablespoons honey
- 1 teaspoon lemon juice
- 1 and ½ cups semi-sweet chocolate chips
- 1 teaspoon sea salt
Instructions
- Line a cookie sheet with parchment paper. Make sure you can easily slide this into your freezer!
- Wash, hull and dice the strawberries into small pieces. Add the strawberries to a bowl along with Greek yogurt, honey and lemon juice. Stir well to combine.
- Place small spoonfuls of the strawberry yogurt mixture onto the prepared cookie sheet. You should get about 12 bites. Place in freezer to firm up for 1-2 hours.
- Once the yogurt is frozen, add the chocolate chips and coconut oil to a microwave safe bowl. Microwave in short 30 second bursts, stirring between each interval until the chocolate is smooth and melted. Let the chocolate cool for a few minutes before dipping the yogurt bites.
- Use a fork to lower the yogurt bites into the melted chocolate. I found it easier to use a spoon to also spoon the chocolate over the top of the bites. Set the chocolate covered yogurt bites onto parchment paper and if add sea salt sprinkle a pinch over the top immediately because the chocolate will firm quickly.
- Once all of the yogurt bites are covered in chocolate return the tray back to the freezer for a few minutes to firm up. Transfer the bites to an airtight container and keep in the fridge for up to 4 days or freezer for a month.
