M&M Christmas Cookies
Ingredients
- 2 sticks unsalted butter, softened to room temperature
- 1 cup sugar
- ½ cup brown sugar, packed
- 1 ½ teaspoons vanilla extract
- 2 large eggs
- 2 and ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups M&M candies
- 1 cup semi sweet chocolate chips
Instructions
- Preheat oven to 350° F. Line a cookie sheet with parchment paper.
- In the bowl of a stand mixer add the room temperature butter and both types of sugar and beat on medium speed and soft and fluff.
- Add the vanilla extract and both eggs one at a time and beating well between each egg.
- Add the flour gradually along with the baking soda and salt. Be cautious to not over mix the cookie dough.
- Using a spatula stir in the M&M's and chocolate chips.
- Use a #40 cookie scoop to make a cookie dough ball. I made jumbo cookies by combining 2 balls into one large dough ball. These are very large cookies so leave plenty of room between. I fit 2 on a row with 3 rows on my cookie sheet. *see notes
- Bake in preheated oven for 11-13 minutes. The cookies will need a few minutes to cool on the cookie sheet and then transfer to a cooling rack.
- Once the cookies are completely cooled, store in an airtight container for 2-3 days or in the freezer for up to 3 months.
