Why This Chocolate Chip Baked Oats Recipe Is The Best!
I absolutely love baked oats. I make different variation of my basic recipe depending on what ingredients I have on hand. In the fall I love the baked apple oatmeal and in the spring the lemon blueberry baked oatmeal is the perfect treat. But if you are having a craving for something sweet than this chocolate chip oatmeal bake is the perfect one for you!
The chocolate chip version of baked oats is kind of a cross between oatmeal chocolate chip cookies and cookie dough. It's sweet, chocolatey but still full of wholesome ingredients. This is a fun way to get your kids to eat breakfast, especially those picky eaters!
This baked oatmeal recipe is so easy because you can mix all of the ingredients in one bowl. I mix the wet ingredients first and then add the dry ingredients and pop it in the oven for a simple but filling breakfast recipe.
Equipment Needed
casserole dish- use a 8x8 or 9x6 baking dish for the recipe. If you want to double the recipe a 13x9 baking dish is the perfect size.
Key Ingredients
oats- old-fashioned oats or rolled oats have been steamed and flattened in order for the oats to cook quicker than oat grouts. I think these are the best choice for baked oatmeal. Steel cut oats would require more liquid and a longer cooking time to soften them and instant oats would turn to mush.
chocolate chips- dark chocolate chips or semi-sweet chocolate chips are my favorite, but any type will work. You can use mini chocolate chips or even white chocolate chips for this recipe.
Step-By-Step Instructions
Preheat the oven to 350 degrees Fahrenheit. Lightly spray the baking dish with cooking spray.
In a large mixing bowl, stir together the honey, applesauce, Greek yogurt, almond butter, coconut oil, almond milk, vanilla extract and egg. Once mixture is combined add the oats, baking powder, salt and chocolate chips.
Pour the oat mixture into the baking dish. Smooth batter so that it is even in the baking dish. It will be very runny but will firm as it bakes. Bake the oats in preheated oven for 40 minutes.
How To Serve Baked Oats
I like to serve baked oats warm straight from the oven. This way it has the texture of a freshly baked cookie. You can drizzle a little milk or extra honey over the top.
Substitutions and Additions
coconut oil- can be substituted with any neutral flavored oil. Avocado oil is a great choice.
honey-maple syrup is also a great way to sweeten baked oatmeal without using refined sugar. You can also use brown sugar but because it is not as sweet as honey use a ½ cup in the recipe for better results.
almond milk- almond milk is my go to dairy free alternative, however you can use oat milk, cashew milk, coconut milk or regular cow's milk in this recipe.
almond butter- I like almond butter in this recipe because it has a more subtle flavor than peanut butter. If you want to use peanut butter it will work or try this peanut butter baked oats recipe that is loaded with peanut butter. You could also substitute cashew butter or any other nut butter.
applesauce- can be substituted for banana. I use bananas in a lot of my baked oatmeal recipes, however I know there are a lot of people that are not crazy about the flavor. If you are looking for baked oats without banana then this is the recipe for you!
Can I Make This Recipe Vegan?
Yes! Make a flax egg to replace the egg in the recipe. Substitute maple syrup for the honey. Use vegan chocolate chips and vegan yogurt. Because baked oats do not rise exactly like a cake these substitutions will work very well in this recipe.
Storage Suggestions
Baked oatmeal is the perfect make ahead meal. Allow the baked oats to cool to room temperature. Store leftovers in an airtight container in the refrigerator for 3-4 days. Warm in the microwave for 60-90 seconds.

Shelly
Can you make this without any nut butter? My daughter is allergic.

Hi Shelly, yes you can but I would add an extra tablespoon of coconut oil in place of the almond butter. Let me know how it works out!
