While the skewers soak, add the cubed chicken to a large mixing bowl along with the olive oil, paprika, smoked paprika, onion powder, garlic powder, salt, and pepper. Toss everything together until each piece of chicken is evenly coated.
In a separate small bowl, whisk together the mayonnaise, Thai sweet chili sauce, Sriracha, chili crisp, soy sauce, lime zest, and lime juice until smooth. Set aside a portion of the sauce for serving and dipping, so it never touches the raw chicken.

- 2 and ½ pounds boneless, skinless chicken breast cut into 1 inch cubes
- 1 tablespoon olive oil
- 1 teaspoon paprika
- ¼ teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Bang Bang Sauce
- 1 cup mayonnaise
- ⅓ cup Thai sweet chili sauce
- 3 tablespoons Sriracha sauce
- 1 tablespoon chili crisp
- 1 tablespoon soy sauce
- 1 teaspoon lime zest
- 2 tablespoons lime juice
Instructions
- Soak wooden skewers in water for 30 minutes to prevent burning on the grill.
- In a large bowl, combine the chicken cubes with olive oil, paprika, smoked paprika, onion powder, garlic powder, salt, and pepper. Toss to coat evenly.
- In a small bowl, whisk together the mayonnaise, Thai sweet chili sauce, sriracha, chili crisp, soy sauce, lime zest, and lime juice. Set aside a portion for serving.
- Thread the seasoned chicken cubes onto the soaked skewers. Brush the chicken skewers with bang bang sauce on all sides to evenly coat. Discard any left that touched raw chicken.
- Heat grill to 450°F. Grill skewers for 12-14 minutes, rotating occasionally, until chicken reaches an internal temperature of 165°F and is charred on all sides.
