Cake mix cookies are an easy dessert recipe. Luckily for me, my family loves cake mix cookies and, we have made a lot! The Red Velvet Cake Mix Cookies are my daughter’s favorite and she makes them herself now.
They are always a huge it for any special occasion or just a random Tuesday when you need a quick treat! These colorful strawberry cake mix cookies will quickly become your new favorite!

Equipment Needed
large mixing bowl
hand or stand mixer- this will make the mixing easier. You can do this with a spoon but it will require a little more work.
spatula
cookie scoop
large baking sheet
parchment paper- just makes clean up easier. You can also use a silicone mat.
Key Ingredients
strawberry cake mix- the flavor for your strawberry cookies are already added to the boxed cake mix to make this recipe easy!
butter-gives the cookies moisture and a rich flavor. Make sure your butter is at room temperature so it mixes easier.
eggs- bind the ingredients together.
white chocolate chips- add a little extra sweetness to the cookies.
Step-By-Step Instructions
Preheat the oven to 350° F. Line a cookie sheet with parchment paper.
Add the eggs and butter to a large bowl. Use a stand or hand mixer to mix together. Add the cake mix and continue to mix until there are no dry streaks of cake mix remaining.
Mix in the chocolate chips. Use a medium cookie scoop to portion out the cookies. I used a number 40 cookie scoop which is about 1.6 tablespoons. If you do not have a cookie scoop use a spoon and try to make them as even as possible.
Space the cookie dough balls about 2 inches apart on the prepared baking sheet so that they have room to spread.
Bake in the preheated oven for 11-12 minutes. When they are finished baking remove them from the oven and stick a few remaining chocolate chips on top while they are still hot. This step isn't necessary but this is the best way to see those chips peaking out of the cookie. If you place them on top when you put them in the oven they will brown and not look very pretty. The ones that are covered in the dough will be protected.
Remove the cookies from the cookie sheet and place them on a cooling rack or wire rack. Make sure they are completely cool before storing them.
Substitutions And Additions
frosting- a cream cheese frosting would be a great addition to these cookies.
butter- I love the richer flavor that butter gives the cookies but you could also use a ½ cup of vegetable oil instead.
chocolate chips- instead of white chocolate chips use dark chocolate chips. Or you can leave them out completely and make strawberry crinkle cookies instead. Roll the cookies in a ⅓ of a cup of powdered sugar. This is how we make the Lemon Cake Mix Cookies. You will want to check out my tips for rolling these cookies.
strawberries- add fresh strawberries to the batter to give a more intense strawberry flavor.
Storage
Store cooled cookies at room temperature in an airtight container for 3-4 days.
Freezing- Cake mix cookies also freeze very well. Place cookies in a freezer bag or freezer-safe container, layer with wax paper and freeze for 2-3 months.

Ingredients
- 1 15.25 ounce box strawberry cake mix
- 1 stick unsalted butter, room temperature
- 2 large eggs, room temperature
- ¾ cup white chocolate chips
Instructions
- Preheat the oven to 350° F. Line a cookie sheet with parchment paper.
- Add the room temperature butter and the eggs to a mixing bow. Use a hand mixer or stand mixer to beat the ingredients together. Add the cake mix and continue to mix until there are no streaks of dry cake mix remaining.
- Use a cookie scoop to portion out the cookies and place them on the cookie sheet about 2 inches apart to allow room for spreading. See notes below.
- Bake the cookies in the preheated oven for 11-12 minutes. Remove the cookies and place reserved white chocolate chips on the tops if desired. See notes below.
- Remove cookies to a cooling rack and allow to cool completely before storing in an airtight container. Store at room temperature for 3-4 days or freeze for 2-3 months.
