Equipment Needed
sheet pan- A large rimmed sheet pan is perfect for the salmon sheet pan meal.
Key Ingredients
salmon- you can purchase precut salmon fillets from the seafood counter at the grocery store or buy a whole salmon fillet and cut it into portion sizes.
butter-gives the potatoes, salmon and asparagus great flavor while they roast in the oven.
Italian seasonings-this dried herb blend is a great pantry staple and is perfect on the sheet pan salmon.
lemon zest and juice-you can't beat the flavor of fresh lemon juice and adding a little zest brings the flavor out even more.
Dijon mustard-adds a great flavor to the butter sauce. Make sure to get the grainy Dijon.
asparagus- fresh asparagus is delicious roasted and has many micronutrients.
baby potatoes-I love baby Yukon Gold potatoes. They are very tender and do not need as much butter because they have a creamy texture.
salt and pepper-is always a great flavor addition especially to potatoes.
garlic-fresh minced garlic cloves add so much flavor to entire meal.
Step-By-Step Instructions
Preheat oven to 400° F.
Wash the potatoes and cut in half. If the potatoes are larger you may want to cut them into smaller pieces so that they cook quicker.
Add the potatoes to a large mixing bowl. Drizzle with half of the melted butter, half of the garlic, ¼ teaspoon salt, pepper and a ½ teaspoon of Italian seasoning. Stir well to coat the potatoes, then scatter them onto a rimmed sheet pan.
In the same bowl that you mixed the potatoes in, add the remaining butter, lemon zest and lemon juice, remaining Italian seasoning, garlic, Dijon mustard, salt and pepper. Mix well to combine. You may need to microwave again if the butter congeals from the cold lemon juice. A few seconds should be plenty.
Cook in the preheated oven for 20 minutes or until they are getting close to cooked through. Remove the sheet pan and move the potatoes to one side to make room for the salmon fillets and asparagus.
Spoon the butter mixture over the salmon fillets and asparagus and add a few lemon wedges to garnish. Return the sheet pan back to the oven and bake for an additional 10 minutes. To give the salmon and veggies a nice char you can heat the broiler and cook for an additional 2-3 minutes directly under the broiler.
Make Ahead And Storage
This is a fantastic meal prep meal. You can make this for dinner and portion out the leftovers for lunch throughout the week. Store any leftovers in an airtight container for 3-4 days. This can be reheated in the microwave for 60-90 seconds or in the oven till warmed through.
Substitutions And Additions
Italian seasoning- this spice blend contains many dried herbs like oregano, basil, rosemary and thyme. You can always make your own blend or use a few of these dried herbs instead.
potatoes- I like the texture of baby Yukon gold potatoes but you can use any potato. Even sweet potatoes would be delicious with this dinner. The cook times may vary so make sure to test them often.

Easy Sheet Pan Salmon With Asparagus
Ingredients
- 1 pound baby potatoes
- ¼ cup unsalted butter, melted (divided)
- 1 teaspoon Italian seasoning, divided
- 2 tablespoons garlic, minced (divided)
- ½ teaspoon salt, divided
- ½ teaspoon pepper, divided
- 2 teaspoons Dijon mustard
- ½ teaspoon lemon zest
- 2 tablespoons lemon juice
- 4- 4 ounce salmon fillets
- 1 pound asparagus, ends trimmed
Instructions
- Preheat the oven to 400° F. Line a sheet pan with aluminum foil for easier clean up.
- Wash and cut potatoes into smaller bite-sized pieces. Add the potatoes to a large mixing bowl. Add 2 tablespoons of melted butter, 1 tablespoon minced garlic, ½ teaspoon of Italian seasoning, ¼ teaspoon salt and ¼ teaspoon pepper. Toss well to coat and spread the potatoes onto the sheet pan.
- Roast potatoes in preheated oven for 20 minutes, stirring occasionally.
- While potatoes are cooking, prepare the salmon and the asparagus. Trim the ends off the asparagus. Add the remaining butter, Italian seasoning, garlic, salt, pepper, Dijon mustard, lemon zest and lemon juice to a large bowl. If the butter congeals from the cold lemon juice microwave for a few seconds.
- Once the potatoes are roasted to almost fork tender, remove from the oven. Use a spatula to move the potatoes to one side of the pan. Add the salmon fillets and asparagus to the pan. Spoon the butter sauce over the salmon and asparagus. Add sliced lemon to garnish if desired.
- Return the salmon to the oven and continue to cook for an additional 10 minutes or until the salmon is cooked through and flakes easily with a fork. To give the salmon and vegetables a nice char you can turn the broiler feature on the oven and broil for 2-3 minutes.
- Serve immediately or portion into individual containers for meal prep for the week.
