    Easy Rice Krispies Treats with Chocolate Chips

    Rice Krispies Treats with Chocolate Chips are a fun snack for kids and adults.  This easy no bake dessert will be your new favorite treat for school lunches, parties or holidays. Who doesn’t like a gooey sweet treat with some added chocolate?  This Rice Krispies Treats recipe will be something the whole family will love.

    With Mia out of school and home for the summer I’m always looking for quick things she can help me make.  She likes to help in the kitchen but I still find it best to have everything prepped and ready, especially when I’m experimenting with new recipes.  Luckily, Rice Krispies Treats are extremely easy and she loves stirring the marshmallows until they melt!  We decided to experiment with adding semi-sweet chocolate chips to this classic favorite.

    How do you make rice krispies treats with Chocolate Chips?

    I love no bake recipes!  Rice Krispies treats are such an easy recipe because they only require minimum time on the stove top.  Even if you have trouble with baking you can make Rice Krispies Treats!  They are also a fun recipe to make with kids.  There are minimum ingredients making it easy for little ones to follow along.  These are great for school snacks too.

    Start by preparing your pan.  I like to use my Pyrex 13x9 inch glass baking dish.  I line the bottom of the pan with parchment paper or wax paper and spray a bit of nonstick cooking spray on the paper.
    Next melt butter in a large pot over medium heat.  Once melted stir in mini marshmallows until just melted.

    Remove from heat and stir in vanilla extract and salt.  Then, add rice cereal to the melted marshmallows and stir well to completely coat cereal with marshmallow mixture.  After the cereal mixture cools for 5 minutes you can add the chocolate chips.
    Pour mixture into prepared pan and gently press down with spatula.  Sprinkle with reserved chocolate chips.  Allow to cool for one hour before cutting into bars.

    How do you keep Rice Krispies treats from falling apart?

    Don’t skimp on the amount of marshmallows in your recipe!  Marshmallows are the glue for your Rice Krispies Treats.  This recipe has a lot of extra marshmallows added to insure they stick together well.  Make sure your cereal is evenly coated with the marshmallow mixture.  Also lightly press into prepared dish with a spatula.

    should Rice Krispies treats be refrigerated?

    No!  Do not store your treats in the refrigerator.  When the marshmallow gets cold it changes the texture making them hard.  When we think of rice cereal treats we think of light and airy almost like biting into little pillows.  After refrigeration the cold Rice Krispies Treats are not at all the same experience that you expect from this gooey marshmallow treat!
    After experimenting with refrigerating a few bars I felt it changed the consistency of the marshmallow.  After this experiment I’ve decided storing on the counter at room temperature is the best method.

    How should I store Rice Krispie treats?

    Rice Krispies Treats are best stored in an airtight container at room temperature.  I leave mine on the kitchen counter.  They are best if eaten within 3 days after they are made.  So keep in mind to make these the day of or day before serving so they are at their freshest!

    Different add ins for rice krispies treats

    Here are a few ideas for a Rice Krispies Treat variation.  Of course you can always use any chocolate chip that you prefer whether it is milk or dark chocolate or even mini chocolate chips.  I think M & M's would be a fun way to make this a holiday dessert by using green and red candies. 

    We are also accustom to the Rice Krispies Cereal that we all grew up with, however now there are cocoa krispies or even frosted rice krispies if you want an even sweeter experience.

    Ingredients

    • 10 tablespoons butter, melted
    • 2 10 ounce packages mini marshmallows
    • 1 teaspoon vanilla extract
    • pinch of salt
    • 9 cups rice cereal
    • 1 ½ cups chocolate chips, divided

    Instructions

    • Prepare a 13x9 inch pan with parchment paper slightly overlapping sides. Spray lightly with cooking spray and set aside.
    • Melt butter in a large pan over medium high heat.
    • Add marshmallows to pan and stir until completely melted.
    • Remove from heat and stir in vanilla extract and salt. Add in cereal.
    • Stir until cereal is completely coated with marshmallow. Allow to cool for 5 minutes before adding 1 cup of chocolate chips.
    • Chocolate may melt slightly but that is okay. Stir and pour into prepared pan.
    • Sprinkle remaining chocolate chips over top, pressing gently with spatula.
    • Leave on counter for 1 hour for Rice Krispies Treats to set up. Lift with parchment and set on cutting board. Use a sharp knife to cut into 20 bars.
    • Store on countertop. Do not refrigerate.
