Creamy Chicken Noodle Soup With Rotisserie Chicken
Ingredients
- 3 tablespoons unsalted butter
- ½ cup onion, diced
- 1 cup carrots, peeled and chopped
- 1 cup celery, chopped
- 3 tablespoons all-purpose flour
- 4-5 cups chicken broth
- ¼ teaspoons garlic powder
- ¼ teaspoon Italian seasoning
- ¼ teaspoon thyme
- salt and pepper to taste (I used ⅛ teaspoon each)
- 1 bay leaf
- 3 cups wide egg noodles
- 3 cups shredded rotisserie chicken
- ½ cup heavy cream
- garnish with fresh parsley- optional
Instructions
- Heat a large pot or Dutch oven over medium low heat. Melt the butter and add the onion, carrots and celery. Sauté for 4-5 minutes.
- Add the flour to the pot and cook for an additional minute.
- Pour in the chicken broth, then stir in the seasonings: garlic powder, Italian seasoning, thyme, salt, pepper, and bay leaf.
- Bring this to a low boil and add the egg noodles. Cook the noodles until tender: about 6-8 minutes depending on brand.
- Remove from heat and stir in shredded chicken and cream.
- Serve right away with fresh parsley for garnish and crackers or bread.
