    Equipment Needed

    • Dutch oven or large pot
    • Knife and cutting board
    • Spatula or wooden spoon

    Rotisserie chicken - It makes the cooking easy, yet it still feels homemade! A shredded rotisserie chicken makes an excellent rotisserie chicken soup.

    Heavy cream - It's the key to the creamy chicken soup texture and rich flavor.

    Fresh parsley (optional) - To add freshness and color to its finish, add as a garnish.

    Ingredients: celery, carrots, heavy cream, spices, bay leaf, chicken stock, egg noodles, all purpose flour, onion, shredded chicken, half & half

    Step-By-Step Instructions

    Sauté the vegetables (carrots and celery) alongside the aromatics (onion) in a large pot over medium-low heat in melted butter. Sauté them for 4 to 5 minutes or until they begin to soften.

    Add the flour over the veggies and cook them for 1 minute while stirring. This step will help create a light roux to achieve the desired thickness.

    Slowly add the chicken broth and stir constantly. Stir in the herbs and spices (bay leaf, thyme, Italian seasoning, and garlic powder) along with salt and pepper. Bring them to a gentle boil.

    Add the egg noodles and let them cook for about 6 to 8 minutes or until al dente.

    Once the egg noodles are cooked, remove the pot from the heat and add the heavy cream and shredded rotisserie chicken, stirring until everything is warmed through.

    Garnish it with fresh parsley and enjoy it warm!

    This hearty chicken noodle soup is perfect as is but if you want to make it more of a meal you can try the following:

    • Warm dinner rolls or buttery crackers.
    • A side salad for a light option.
    • For a classic comfort food combo, a grilled cheese would be perfect.

    Make Ahead

    Looking for a great make-ahead soup? Creamy chicken noodle soup is perfect for you! You can make the entire soup, let it cool, and store it in an airtight container in the refrigerator up to 3 days. If you plan to serve it later, consider cooking the egg noodles separately.

    Storage

    • Store the cooled soup in an airtight container in the fridge for 3 to 4 days.
    • If you want to freeze it, you can leave out the noodles, as they are not freezer-friendly and will become mushy over time when reheated. Simply freeze the base and add the freshly cooked egg noodles just before serving.

    To reheat, warm them gently over low heat on the stove and stir occasionally. Add a splash of cream or broth if the mixture thickens too much.

    Substitutions and Additions

    • No rotisserie chicken? No problem! Use leftover roasted chicken instead, or cook boneless skinless chicken breast and shred.
    • Egg noodles- You can use elbow macaroni, rotini, or pasta shells as an alternative to wide egg noodles.
    • Veggie boost! Add corn, peas, spinach, or mushrooms for an extra nutritional boost.
    • Spice it up! Add a dash of hot sauce for a little kick, or a pinch of red pepper flakes.

    Ingredients

    • 3 tablespoons unsalted butter
    • ½ cup onion, diced

    Instructions

    • Heat a large pot or Dutch oven over medium low heat. Melt the butter and add the onion, carrots and celery. Sauté for 4-5 minutes.
    • Add the flour to the pot and cook for an additional minute.
    • Pour in the chicken broth, then stir in the seasonings: garlic powder, Italian seasoning, thyme, salt, pepper, and bay leaf.
    • Bring this to a low boil and add the egg noodles. Cook the noodles until tender: about 6-8 minutes depending on brand.
    • Remove from heat and stir in shredded chicken and cream.
    • Serve right away with fresh parsley for garnish and crackers or bread.
