- Fork
- 9x13 inch baking dish
- Rubber spoon or spatula
- Measuring cups and spoons
- Oven
Key Ingredients
For the Crumb Topping
- All-purpose flour - It gives structure to the crumb topping and helps achieve those classic soft bakery-style crumbles.
- Brown sugar - Adds molasses-like sweetness and helps the crumb topping brown beautifully.
- Granulated sugar - It balances the brown sugar with a lighter sweetness.
- Ground cinnamon - It adds the warm and cozy spice that defines a coffee cake.
- Salt - It brings out the best of all flavors and balances the sweetness.
- Unsalted butter - It binds all the ingredients together to form irresistible crumbs. Remember to melt it and let it cool.
For the Coffee Cake
- Yellow cake mix - The key shortcut in this coffee cake is from a box. It has the classic flavor and moist texture.
- Sour cream - It adds moisture to the cake and a slightly tangy flavor to balance the sweetness.
- Vegetable oil - It keeps the cake soft and tender.
- Water - It helps blend everything smoothly.
- Eggs - Helps bind the batter. It gives the cake structure and stability as it bakes.

Step-By-Step Instructions
Start by preheating the oven at 350°F and greasing the 9x13 baking dish generously.
Using a small bowl whisk the flour, brown sugar, white sugar, cinnamon, and salt. Add the cooled melted butter and mix with a fork until you get a crumbly mixture. Avoid overmixing. It should form loose crumbs and not a paste. Refrigerate it while prepping the cake.

In a large bowl, combine the yellow cake mix, vegetable oil, water, sour cream, and eggs. Stir in the eggs one at a time, be careful not to overmix. The batter will be thick.
Assemble the layers by pouring half the batter into the prepared baking dish and spreading it evenly.

Sprinkle about ⅓ of the crumb topping over the batter. Break up any large chunks with your fingers. Pour the remaining cake batter carefully over the crumbs, and finish by sprinkling the remaining crumb topping on top.
Bake for 30 to 35 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean. Let it cool slightly before serving.

Serving Recommendations
This coffee cake from a mix is tasty straight from the oven, but try out these few ways to level it up:
- Drizzle with glaze - Mix 1 to 2 tablespoons of milk and ½ cup powdered sugar until smooth. Drizzle over the cooled cake for extra sweetness and a shiny finish.
- Add whipped cream - A soft dollop on top gives it a light and creamy finish.
- Serve with berries - Fresh strawberries, blueberries, or raspberries balance the richness beautifully.
- Make it dessert-ready - Add a scoop of vanilla or cinnamon ice cream for a decadent treat.
- Pair with your favorite coffee or tea - This is what coffee cake is all about! This will make you love coffee even more!

Make Ahead
This yellow cake mix coffee cake is excellent for making ahead! Bake it the night before and cover tightly once cooled. It tastes better the next day as the flavors meld together. Wait to add any glaze or toppings until just before you serve it.

Storage
At room temperature, store it in an airtight container for up to 3 days. In the refrigerator, it remains fresh for 5 to 6 days. If you want to freeze, wrap the slices tightly and store them in a freezer-safe bag or container for up to 2 months. Thaw at room temperature or in the microwave on defrost before serving.

Expert tips
Cool the butter before mixing the crumb topping—hot butter can melt the sugar and create a paste instead of crumbs.
Refrigerating the crumb mixture- cold crumbs help it hold its shape while baking.
Use a light touch when layering the batter. The crumb layer can shift if you press too hard—spread gently!
Add-ins are welcome! Try mixing in chopped nuts, mini chocolate chips, or even a swirl of jam for variety.
Want more crumble on top? You can double the crumb topping and use less between the layers if you want a taller, bakery-style look.

Cake Mix Coffee Cake
Ingredients
Crumb Topping
- 1 and ½ cups all purpose flour
- ½ cup brown sugar, firmly packed
- ⅓ cup sugar
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 10 tablespoons unsalted butter, melted and cooled
Coffee Cake
- 1 15.25 ounce box yellow cake mix
- ¾ cup sour cream
- ½ cup vegetable oil
- ¼ cup water
- 3 large eggs
Instructions
- Preheat oven to 350℉ and grease a 9x13 inch baking dish.
- Add the ingredients for the crumb topping into a small bowl. Make sure your butter is melted but has cooled down. Use a fork to work the mixture into crumbs not a paste. Refrigerate while mixing the cake together.
- In a large bowl add the cake mix and other ingredients for the cake. Stir the eggs well after adding each one, being careful to not over mix the batter. The batter will be very thick.
- Add half of the cake batter to the prepared baking dish. Layer with about a ⅓ of the crumb topping (I like to have more for the top for a prettier presentation). Use your fingers to sprinkle the crumb topping and break up any crumbs that are very large.
- Carefully spread the remaining cake batter over the crumb layer and repeat with the remaining crumbs for the top.
- Bake in the preheated oven for 30-35 minutes or until cake is golden brown and a tooth pick inserted comes out clean.
