    There’s something charmingly chaotic about seeing a lobster tail and a steak sharing space under fluorescent lighting. Chefs know exactly the look that crosses everyone’s face in the kitchen when someone orders the diner surf-and-turf. It’s the same look people give when they realize their childhood pet was definitely not a purebred anything. 

    The dish arrives sizzling and proud, like it thinks it deserves a Michelin star. Diners dig in with enthusiasm while the chef quietly stares at the plate, wondering what aquatic journey that lobster went on before landing here. It’s not judgment, it’s scientific curiosity.

    Every chef knows a rebel when they see one, and that rebel is the customer who orders nachos at a place with cloth napkins. Not fancy nachos with braised short rib and a truffle drizzle. No. The regular, fully unhinged, orange-cheese, avalanche-of-jalapeños nachos. 

    This dish sparks existential questions in the kitchen like, “Did we… make this decision?” But when they see it arrive at the table, glowing with neon cheese like it was born in a convenience store at 2 a.m., they can’t help but laugh as the table crushes it in minutes. It’s dinner theater.

Chefs don’t actually hate these dishes; they just have complicated relationships with them. They’ve seen the behind-the-scenes sagas: the last-minute requests, the culinary plot twists, the moments when an order ticket prints and someone in the kitchen whispers, “Not today.”
