- 3 large bell peppers (any color), cut into thin strips
- ½ large red onion
- 2 cloves garlic
- 1 teaspoon lime zest
- juice of 1 lime
- 2 tablespoons olive oil
- 1 tablespoon fajita or chicken taco seasoning
- 1.5 pounds boneless skinless chicken breast, cut into thin strips
- fresh cilantro

Preheat oven to 400° F. Spray a large sheet pan with cooking spray.
Slice peppers and onion into thin strips and mince the garlic.
Cut the chicken breast into thin strips.
In a large bowl add the lime zest, lime juice, olive oil and taco seasonings. Stir well.
Add the peppers, onions, garlic and chicken to the bowl and toss well to coat.
Spread the chicken and vegetables in an even layer over the bottom of the sheet pan.
Bake in preheated oven for 10 minutes. The vegetables will release water, carefully pour that off and stir the fajita mixture. Return to oven and bake for 5 more minutes.
To char vegetables and chicken turn broiler on and place the sheet directly under the oven broiler for 2-3 minutes. Check the chicken with a meat thermometer to insure it reaches the internal temperature of 165°.
Remove the fajitas from the oven and squeeze with additional lime wedge. Garnish with cilantro. Serve with warm tortillas, avocado, sour cream and cheese.
