White Chocolate Chip Strawberry Cake Mix Cookies

Equipment

  • large bowl
  • hand or stand mixer
  • baking sheet
  • parchment paper
  • cookie scoop

Ingredients

  • 1 15.25 ounce box strawberry cake mix
  • 1 stick unsalted butter, room temperature
  • 2 large eggs, room temperature
  • ¾ cup white chocolate chips

Instructions

  • Preheat the oven to 350° F. Line a cookie sheet with parchment paper.
  • Add the room temperature butter and the eggs to a mixing bow. Use a hand mixer or stand mixer to beat the ingredients together. Add the cake mix and continue to mix until there are no streaks of dry cake mix remaining.
  • Use a cookie scoop to portion out the cookies and place them on the cookie sheet about 2 inches apart to allow room for spreading. See notes below.
  • Bake the cookies in the preheated oven for 11-12 minutes. Remove the cookies and place reserved white chocolate chips on the tops if desired. See notes below.
  • Remove cookies to a cooling rack and allow to cool completely before storing in an airtight container. Store at room temperature for 3-4 days or freeze for 2-3 months.

Notes

Cookie scoop- I used a number 40 cookie scoop which is about 1.6 tablespoons. If you do not have a cookie scoop use a spoon and try to make them as even as possible.
Adding extra white chocolate chips- When they are finished baking remove them from the oven and stick a few remaining chocolate chips on top while they are still hot. This step isn't necessary but this is the best way to see those chips peaking out of the cookie. If you place them on top when you put them in the oven they will brown and not look very pretty. The ones that are covered in the dough will be protected.
