Strawberry Fluff Salad

Ingredients

  • 1 3 ounce box strawberry Jello
  • 1 and ½ cups water, divided
  • 4 cups strawberries, diced
  • 1 8 ounce block cream cheese, room temperature
  • 1 8 ounce tub Cool Whip
  • 2 cups mini marshmallows

Instructions

  • Add strawberry Jello to a large bowl and add 1 cup of boiling water. Whisk together until the Jello has dissolved. Add a ½ cup of cold water and put the bowl in the refrigerator to chill while preparing other ingredients.
  • Dice strawberries into very small pieces, and measure 4 cups diced strawberries.
  • In another bowl beat the cream cheese until light and fluffy.
  • After the Jello has chilled for 30 minutes, add the cream cheese to the bowl and very carefully on low speed beat the cream cheese into the Jello (you will need a large and deep bowl to keep this from being messy) or just use a spoon to mix into the Jello. Expect it to be a bit lumpy.
  • Use a spatula to fold in the Cool Whip.
  • Add the diced strawberries and marshmallows and stir until everything is coated in the Jello mixture.
  • Cover with plastic wrap and chill in the refrigerator for at least 4 hours or over night preferred.
