Peanut Butter Pretzel Bites

- ½ cup creamy peanut butter
- 2 tablespoons unsalted butter
- 1 cup powdered sugar
- 60 pretzels
- 1 bag Ghirardelli dark chocolate melting wafers
Get Recipe Ingredients
Line a rimmed baking sheet (that fits in your freezer) with parchment paper. Line up 30 pretzels on the sheet.
Use a hand mixer to combine the peanut butter and butter.
Add the powdered sugar in small increments and mix on low speed. Continue adding sugar slowly. The mixture will be thick and clumpy at first but will come together after 2 minutes of mixing.
Use a ½ tablespoon to measure out the peanut butter mixture. Roll in your hands to form a ball. Mixture should not be sticky and will roll easily.
Place peanut butter ball on top of pretzel. Repeat until all of the peanut butter mixture is used. I made 30 pretzels.
Place a second pretzel on top of the peanut butter and gently press down. Once all of the pretzels are sandwiched place tray in freezer to set for 30 minutes.
After the 30 minutes, melt the chocolate wafers in the microwave following the package instructions.
Dip the peanut butter pretzels into the melted chocolate, shaking off any excess and place back on the parchment paper. Repeat until all pretzels are dipped and let set up on parchment paper. Once chocolate has hardened they can be stored in an airtight container at room temperature for a week.
