Equipment

  • 9x13 inch casserole dish

Ingredients

Blackberries

  • 36 ounces blackberries
  • 3 tablespoons sugar
  • ¼ teaspoon cinnamon
  • 1 tablespoon cornstarch

Cobbler Topping

  • 1 and ½ cups all-purpose flour
  • cup sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 5 tablespoons butter
  • ½ cup +1 tablespoon milk
  • 1 teaspoon vanilla extract

Instructions

Blackberries

  • Preheat oven to 400° F. Lightly spray a 9x13 inch casserole dish with cooking spray.
  • Wash and pick through berries, discarding any bad ones and removing any stems or leaves.
  • Add the berries to the casserole dish. Sprinkle with sugar, cinnamon and cornstarch. Stir to coat and place the berries in the oven while preparing the cobbler topping.

Cobbler Topping

  • Add flour, sugar, baking powder and salt to a mixing bowl and stir to combine.
  • Cut butter into chunks, use a pastry blender or knives to cut the butter into the flour. The flour and butter will become a crumb texture.
  • Pour in the milk and vanilla extract. Use a spatula to stir together until the milk is absorbed and no white streaks of flour remain.
  • Remove the berries from the oven after at least 10 minutes. Add dallops of dough to the top of the berries. Use the back of a spoon to smooth out and cover as much of the berries as possible. (Does not need to be perfect).
  • Bake in preheated oven for 35-40 minutes or until berries are bubbling and juicy and topping is golden brown and not doughy.
  • Let the cobbler cool for 10 minutes before serving. Serve warm or at room temperature with vanilla ice cream or whipped cream.
