Preheat oven to 350℉. Lightly spray a 9 x13 inch baking dish with cooking spray.
Wash and dry the peaches. Using a sharp knife, carefully cut around the center of the peach from one end to the other. Gently twist the peach to open into halves. use a spoon to wiggle the peach pit away from the center.
Place the peaches cut side up in the prepared baking dish.
In a small bowl, melt the butter and stir in the honey, brown sugar and cinnamon.
Spoon mixture into the center of the peaches and spread the mixture all over the tops of the peaches with a pastry brush or the back of a spoon.
Place the peaches in the oven and bake for 30 minutes or until the peaches are soft and juicy.
Serve peaches warm with desired toppings.
