Homemade Tzatziki Sauce

- 1 cup whole milk Greek yogurt
- ½ cup cucumber, grated and water squeezed out
- 1 tablespoon olive oil, plus extra to drizzle
- ½ teaspoon lemon zest
- 1 and ½ tablespoons lemon juice
- 1 teaspoon garlic, grated
- 2 teaspoons fresh dill, chopped
- ¼ teaspoon salt

Grate a half a cup of cucumber. Place the grated cucumber into paper towels. Squeeze well to remove the excess water.

Stir in the squeezed out cucumber, chopped dill and salt. Stir to incorporate.
Spoon everything into a serving bowl if making this for a platter. Drizzle with a little more olive oil and garnish with a few dill sprigs. Serve with warm pitas, meatballs and a Greek salad.
