Healthy Peanut Butter Banana Oatmeal Bars

When school is getting back into full swing moms need to be ready with a snack recipe that not only tastes great but is a healthy choice for their kiddos. This easy snack is made with simple ingredients including whole grains and healthy fats. These peanut butter oatmeal bars are the perfect fun recipe that can also work as a quick breakfast with a glass of milk!

Ingredients

  • 3 medium ripe bananas, mashed
  • 2 large eggs
  • ½ cup natural peanut butter
  • cup honey
  • 2 teaspoons vanilla extract
  • 3 cups old fashioned oats
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 cup chocolate chips, divided
  • flaky sea salt, optional

Instructions

  • Preheat oven to 350°F. Fit a 8x8 inch baking dish with parchment paper so that it is overlapping on the sides.
  • In a large bowl, mash bananas until smooth.
  • Add eggs peanut butter, honey and vanilla extract to the mashed bananas. Stir well to combine.
  • Add the oats, baking powder, salt and cinnamon to the banana mixture. Stir well and mix in ¾ of chocolate chips.
  • Spread the mixture into the baking pan, pressing into the corners and making a smooth even layer. Sprinkle on the remaining ¼ of chocolate chips over the top.
  • Bake in a preheated oven for 30-35 minutes. Cool on a wire rack before cutting into bars. Sprinkle with flaky sea salt, optional but highly recommended!
