Frozen Yogurt Popsicles (Dipped In Chocolate)

Frozen yogurt popsicles are one of my favorite summer treats because they're creamy, fruity, and so easy to make. Finished with a crisp chocolate shell, they're made with just a few simple ingredients and are perfect to keep in the freezer for a quick snack or refreshing dessert.

Ingredients

  • 1 cup raspberries
  • ½ cup plain Greek yogurt (whole milk recommended)
  • 2 teaspoons honey
  • 1 cup semi-sweet chocolate chips, I like Ghirardelli
  • 1 tablespoon coconut oil
  • flakey sea salt, optional

Instructions

  • Add raspberries to a bowl and mash slightly to break them up a bit. Add the Greek yogurt and honey and stir to combine.
  • Line a baking tray with parchment paper and spoon 4 round dollops of the yogurt mixture on the baking try.
  • Take a popsicle stick and press gently into the yogurt and use a spoon to cover the stick. Place the tray in the freezer for an hour to harden.
  • Once the yogurt is frozen, combine the chocolate chips and coconut oil in a small microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth.
  • Working quickly, dunk the popsicles in the melted chocolate, use a spoon to help cover with chocolate and shake off excess. Sprinkle immediately with sea salt.
  • Return to freezer to firm. For storage, keep in the freezer and allow to thaw for 10 minutes before eating.
