Easy Instant Pot Chicken Fajitas Recipe
This Instant Pot Chicken Fajitas recipe is the perfect quick dinner for busy weeknights. In just minutes you can make juicy chicken with flavorful peppers and onions to fill in flour tortillas or a cup of rice. This dinner is also great for meal prep for quick meals during the week!

- 1 and ½ pounds chicken, cut into thin strips
- 3 large bell peppers, any color cut into strips
- ½ large red onion, cut into large pieces
- 1 clove garlic, minced
- juice of 1 lime
- 1 tablespoon Worcestershire sauce
- water (see notes)
- 1 tablespoon chicken taco seasoning (see notes)
- flour tortillas, corn tortillas or rice
- toppings, sour cream, cheese, avocado or salsa
Get Recipe Ingredients
Cut the chicken, bell pepper and onion into thin strips. Mince the garlic. Add everything to the bottom of the Instant Pot.
Squeeze the lime juice into a measuring cup. Add the Worcestershire sauce. If needed add enough water to make sure there is a ¼ cup of liquid. Pour into the Instant Pot.
Sprinkle 1 tablespoon of chicken taco seasoning over the chicken, peppers and onion.
Stir to coat the ingredients with seasoning.
Set the Instant Pot to and time for 4 minutes. Make sure the valve is set to The Instant Pot will take several minutes to come to pressure (mine took about 10 minutes). Once it pressurizes it will begin to count down the 4 minutes.
When the time is up use a long handled spoon or spatula to release the pressure from the steam release valve. DO NOT do a natural release because this will overcook the vegetables and make them mushy.
Use a slotted spoon to remove the chicken and vegetables from the Instant Pot. There will be a lot of liquid that you can discard.
Plate the fajitas on flour tortillas and top with desired toppings.
It is important to have liquid in the Instant Pot when using the Pressure cook feature. If the lime juice and Worcestershire sauce do not equal a ¼ cup add water to make the full ¼ cup.
This chicken taco seasoning is great on fajitas but feel free to use a different fajita seasoning or add extra cayenne pepper if you want it more spicy.
