Easy Crispy Oven Baked Panko Chicken Recipe

Ingredients

  • 2 boneless skinless chicken breast
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 large egg
  • 1 teaspoon hot sauce
  • 1 tablespoon half and half or milk
  • 1 cup panko
  • ½ teaspoon oregano
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • olive oil cooking spray

Instructions

  • Preheat oven to 425° F.
  • Cut the chicken breast in half to make 4 thin chicken cutlets. Season chicken with salt and pepper.
  • Set up a dredging station by whisking the egg, hot sauce and half and half together in a shallow bowl.
  • In another shallow bowl mix the panko, oregano, onion powder and garlic powder.
  • Dunk the chicken into the egg to coat all over, then press the chicken into the panko mixture coating both sides with the crumbs.
  • Place the breaded chicken cutlets on a wire rack over a baking tray. Repeat with remaining chicken pieces. *see notes
  • Spray chicken generously with olive oil cooking spray.
  • Bake in preheated oven for 10-12 minutes or until chicken is cooked through and chicken is golden brown.

Notes

If you do not have a wire tray place a sheet of aluminum foil over the baking sheet and flip the chicken half way through the cooking process.
