- 1 cup grape tomatoes, cut into quarters
- 1-2 garlic cloves
- 2 tablespoons finely chopped red onion
- 2 tablespoons fresh basil leaves (about 6 large leaves)
- 1 tablespoon olive oil
- ¼ teaspoon salt
Chicken
- 2 large boneless skinless chicken breast, cut into cutlets
- 1 teaspoon oregano
- ½ teaspoon sage
- ¼ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 teaspoons olive oil
- 2 tablespoons balsamic glaze

Chop tomatoes, red onion, and garlic and add to a small bowl. Roll up the basil leaves and cut in a chiffonade style which means thin ribbons and add basil to the tomato mixture.
Drizzle tomato mixture with a tablespoon of olive oil and season with ¼ teaspoon of salt. Set mixture aside to marinate while preparing the chicken.
Use a sharp knife to cut the chicken breast horizontally into two separate chicken cutlets. Season the chicken on both sides with oregano, sage, garlic powder, salt and pepper.
Heat a large skillet over medium heat. Add 2 teaspoons of olive oil to the skillet. Once the oil is hot add the chicken to the skillet and cook on the first side for 3-4 minutes and then flip and cook for an additional 3-4 minutes. Chicken should be cooked through and golden brown. Use a meat thermometer to check that the internal temperature reaches 165° F.
Remove the skillet from the heat and add the bruschetta to the chicken. Drizzle with the balsamic glaze. Serve right away with pasta, rice or a simple salad.
