Ingredients

Broccoli Salad

  • 1 pound broccoli crowns, trimmed and cut
  • ¼ cup red onion, diced
  • cup slivered almonds
  • cup sunflower seeds
  • ½ cup dried cranberries

Salad Dressing

  • ¾ cup plain Greek yogurt
  • ¼ cup olive oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon lime juice
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Wash the broccoli and dry with paper towels. Remove the stalks and cut the florets into small bite sized pieces. Add the broccoli to a large bowl.
  • Chop the onion into small pieces and add that to the bowl along with the almonds, sunflower seeds and dried cranberries.
  • In a separate bowl add all of the dressing ingredients. Combine well and pour over the salad. Toss to combine and refrigerate for a couple hours so the broccoli can absorb the dressing and the flavors can blend.

Notes

Make Ahead

This creamy broccoli salad can be made ahead (and should be made ahead). Refrigerate for at least an hour or up to 24 hours. If you want to make this further in advance it is best to keep the salad and the dressing in separate containers and toss it together the day you are serving.
