Cottage Cheese Cookie Dough (Protein Powder Optional)

Cottage cheese may be an old school food but it is making a comeback thanks to its amazing nutritional value. This high protein sweet treat transforms creamy curds into dough form with just a few simple ingredients!

Equipment

  • food processor or blender

Ingredients

  • 1 cup cottage cheese
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or pure maple syrup
  • 1 cup almond flour *see notes
  • 1 scoop protein powder (optional) *see notes
  • ¼ cup mini chocolate chips

Instructions

  • Add the cottage cheese, honey and vanilla extract to a food processor or blender. Blend until smooth. Make sure to scrape the sides of the bowl to get all small curds so that the cheese is an very smooth consistency.
  • Transfer the blended cottage cheese into a mixing bowl. Add the almond flour and protein powder if using and stir until combined and a dough like consistency.
  • Stir in chocolate chips or any other add ins. You can eat right away or refrigerate to stiffen the dough. Keep in an airtight container in the refrigerator for up to 5 days.

Notes

*If using protein powder add ¾ cups of almond flour and add more if needed. 
*Because cottage cheese consistency can vary you may need more almond flour to achieve the consistency you like.  Feel free to add a tablespoon or two if needed.
