Chicken and Broccoli Stir Fry

This Chicken and Broccoli Stir Fry is a simple weeknight dinner with tender chicken, crisp broccoli, and a savory homemade sauce. Everything comes together in one skillet, making it an easy meal when you want something flavorful without spending a lot of time in the kitchen. The added bonus is its far tastier and healthier than any takeout dinner!

Ingredients

Stir Fry Sauce

  • cup soy sauce
  • ¼ cup chicken broth
  • 2 tablespoons honey
  • 1 teaspoon sesame oil
  • 2 cloves garlic, grated
  • 1 teaspoon fresh ginger, grated
  • ¼ teaspoon red pepper flakes (add more or less depending on heat preferences)
  • 2 teaspoons corn starch

Chicken and Broccoli

  • 2 tablespoons olive oil, divided
  • 1 pound boneless, skinless chicken breast cut into 1 inch pieces
  • ¼ teaspoon black pepper
  • 1 crown broccoli, cut into florets

Instructions

  • Mix together the ingredients for the stir fry sauce and mix well to dissolve the honey and corn starch. It is important to not add cornstarch directly to hot liquid without mixing with cold liquid first so that it dissolves properly.
  • Heat a large skillet or wok over medium, high heat. Add one tablespoon of oil and heat until shimmering.
  • Cut the chicken into small 1 inch pieces and season with just pepper. (No need for salt because the soy sauce is plenty salty).
  • Add the chicken to the hot skillet in a single layer and cook for 2 minutes undisturbed to get a good browned sear. Then stir fry or stir quickly to cook the chicken on all sides until cooked through and the chicken reaches 165℉. Remove the chicken to a plate and cover to keep warm.
  • Add the remaining tablespoon of oil to the same skillet and once hot add the broccoli florets. Stir fry for 3-4 minutes for the broccoli to become crisp tender (we do not want over cooked and mushy).
  • Add the stir fry sauce and cook for 1 minute while stirring. The sauce will start to bubble and thicken as it heats. Add the chicken and stir to coat everything in the sauce.
  • Serve immediately with white or brown rice and garnish with additional red pepper flakes or sesame seeds if desired.
