Cheesy Chicken And Rice Casserole

- 2.5 cups shredded cooked chicken, rotisserie (or crockpot shredded chicken* see notes) work great
- 2 cups cooked rice (I used long grain rice)
- 1 22 ounce can family size cream of chicken soup
- ½ cup sour cream
- 1 8 ounce package shredded cheddar cheese, divided
- 1 tablespoon Lipton onion soup mix
- ¼ teaspoon black pepper
- parsley for garnish, optional

Preheat oven to 375°F. While the oven is preheating, lightly grease your 9x13-inch baking dish.
In a large mixing bowl, combine the cooked chicken, cooked rice, cream of chicken soup, sour cream, 1 cup of grated cheddar cheese, onion soup mix and black pepper. Stir well and add the mixture to the prepared casserole dish.
Sprinkle the remaining half of the cheddar cheese over the top of the casserole.
Bake uncovered casserole for 25 to 30 minutes, and the cheese is melted and casserole is bubbling. Garnish with parsley if desired and serve.
