Ingredients

  • 4 slices thick cut hearty bread
  • 2 tablespoons butter
  • 1 cup fontina, grated
  • 5 ounces brie, sliced
  • 1 large peach, thinly sliced
  • hot honey or regular honey to drizzle
  • fresh thyme sprigs, optional

Instructions

  • Butter one side of each slice of bread.
  • Heat a large skillet over medium heat.
  • Layer the unbuttered side of two bread slices with grated fontina, slices of brie, peach slices, a drizzle of honey, and thyme if using. Top with remaining bread, buttered side out.
  • Cook sandwiches 2-3 minutes per side, until golden brown and cheese is melted.
  • Let rest for a minute, then slice and serve warm.
  • Press down gently on the sandwiches with spatula while they cook. It helps everything melt together and gives you that perfect golden crust every time.
