Healthy Peanut Butter Banana Oatmeal Bars

These peanut butter oatmeal bars are the perfect fun recipe that can also work as a quick breakfast with a glass of milk!

Ingredients

  • 3 medium ripe bananas, mashed
  • ½ cup natural peanut butter
  • ¼ cup honey
  • 2 teaspoons vanilla extract
  • 4 cups old fashioned oats
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup chocolate chips

Instructions

  • Preheat oven to 350 degrees Fahrenheit. Fit a 13x9 in baking dish with parchment paper so that it is overlapping on the sides.
  • In a large bowl, mash bananas until smooth.
  • Add peanut butter, honey and vanilla extract to the mashed bananas. Stir well to combine.
  • Add the oats, baking powder and salt to the banana mixture. Stir well and mix in the chocolate chips.
  • Spread the mixture into the baking pan, pressing into the corners and making a smooth even layer.
  • Bake in a preheated oven for 25 minutes. Cool on a wire rack before cutting into bars.
