Heat grill or grill pan to 400℉. Make sure grill is well oiled to prevent burgers from sticking.
In a small sauce pan over medium heat combine the teriyaki sauce ingredients: soy sauce, water, brown sugar, cornstarch, ginger, garlic and red pepper flakes. Bring to a simmer and stir for 3-4 minutes. The sauce will thicken from the cornstarch. Remove from heat and cool.
Slice the pineapple and brush the pineapple with the teriyaki sauce.
In a large bowl add the ground chicken, cilantro, ginger, garlic and 2 tablespoons cooled teriyaki sauce.
Using clean hands work the ingredients into the meat and form 4 equal sized patties.
Grill the burgers, sliced pineapple and red onion. The pineapple and onion will only need 4-5 minutes per side. The chicken burgers will take about 6 minutes per side. After flipping the burgers brush the cooked side with teriyaki sauce.
After the burgers have finished cooking brush the remaining teriyaki sauce over the burgers. Assemble the teriyaki chicken burgers on buns with lettuce, pineapple and red onion. Serve with fries, slaw or salad.
