Pumpkin Bread
- 1 (15 ounce) can pumpkin purée
- 3 large eggs
- ⅓ cup vegetable oil
- 1 (15.25 ounce) box spice cake mix
- ½ teaspoon pumpkin pie spice

Preheat oven to 350° F. Grease a 9x5 inch loaf pan with cooking spray.
In a large mixing bowl add the pumpkin puree, eggs, vegetable oil and mix well.
Add the bag of spice cake mix and pumpkin pie spice to the pumpkin mixture. Use a spoon or spatula to mix in the cake mix until no dry streaks remain.
Spread the pumpkin batter into the prepared loaf pan.
Bake in preheated oven for 45-50 minutes or until a toothpick inserted in the center comes out clean. Tent with aluminum foil half way through cooking time to prevent the top of the bread from over browning.
Cool bread for 10-15 minutes in the pan and then flip the bread out of pan and onto a wire rack to finish cooling. If adding glaze allow bread to completely cool before glazing.
