Loaded Mashed Potato Casserole

Ingredients

  • 3 pounds Gold or Russet potatoes, peeled and cubed
  • 6 slices bacon, cooked and crumbled
  • cup heavy cream or more if needed
  • cup sour cream
  • 2 tablespoons butter
  • 4 tablespoons cream cheese
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder
  • 2 tablespoons fresh chives, chopped
  • 1 and ½ cups cheddar cheese, grated

Instructions

  • Place the peeled and cubed potatoes in a Dutch oven or large pot in just enough cold water to cover them. Bring the water to a boil and then reduce the heat to simmer. Cook the potatoes for 15 minutes or until fork tender. Once cooked drain the water.
  • Meanwhile cook the bacon until crispy in a skillet or you can use the oven method. Set on paper towels to cool and then crumble the bacon.
  • Add the heavy cream, sour cream, butter, cream cheese, salt, pepper, and garlic powder to the warm potatoes. Using a potato masher, mash until the potatoes are smooth and the ingredients are fully combined. Continue mashing and mixing until the texture is creamy and no large lumps remain. If needed add a little extra cream.
  • Once the potatoes are mashed add half of the cheddar cheese, half of the bacon and half of the chives. Stir to combine. Spread the potato mixture into a 9x13 casserole dish.
  • Top the casserole dish with remaining bacon, cheese and chives. Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake an additional 10-12 minutes or until the cheese is melty and bubbling.
