Crockpot Lemon Garlic Chicken

- 4 boneless, skinless chicken breast
- 2 teaspoons Italian seasoning
- ¼ teaspoon paprika
- ½ teaspoon sea salt
- ½ teaspoon freshly ground pepper
- 2 tablespoons unsalted butter
- 4-5 large garlic cloves, thinly sliced
- 2 large lemons- one sliced and one zested and juiced
- ¾ cup chicken broth
- 1 tablespoon cornstarch
- 1 tablespoon cold water

Season chicken on both sides with Italian seasoning, paprika, sea salt and ground black pepper.
Heat a large skillet over medium heat and melt the butter. Add the chicken to the skillet and sear for 2-3 minutes per side to give color to the chicken (it will not be cooked through).
Transfer the chicken to a 6 quart crockpot. Add the garlic and lemon slices.
Mix the chicken broth, lemon zest and lemon juice together and pour over the chicken in the crockpot. Set the crockpot to low for 4 hours or high for 2 hours.
Once the chicken has cooked you can make the sauce by pouring the broth mixture into a saucepan. Mix the cornstarch with a tablespoon of cold water and add to the broth. Bring to a simmer and stir until thickened. Pour over the chicken. (This can be done in the crockpot as well but it will take 30 minutes and the pan method takes only a couple minutes!)
