Crockpot Honey Garlic Chicken

Ingredients

  • 2 boneless, skinless chicken breast (about 1.5 pounds)
  • ½ cup low sodium soy sauce
  • cup honey
  • 3 tablespoons hoisin sauce
  • 3-4 large garlic cloves, minced
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon Sriracha
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • green onions and sesame seeds for garnish, optional

Instructions

  • Add the chicken to the crockpot.
  • In a bowl, mix together the soy sauce, honey, hoisin sauce, garlic, ginger and Sriracha. Stir until the honey dissolves. Pour over the chicken. Set the crockpot on high for 3-4 hours or low for 6-7 hours.
  • When the chicken is tender and easily shredded with forks, remove from the crockpot to a plate. Stir together the cornstarch and water and add to the crockpot turning the heat to high and keeping the lid on.
  • Shred the chicken and add back to the crockpot. The sauce will thicken after a few minutes and the chicken will soak up the sauce.
  • Serve over rice and with steamed broccoli or other veggies.
