Cheesy Beef One-Pot Taco Pasta

- 1 tablespoon olive oil
- 1 cup onions, chopped
- 1 pound lean ground beef
- 2 cloves garlic, minced
- 1 can Rotel, undrained
- 1 can enchilada sauce
- 1 and ½ cups beef broth
- 8 ounces pasta shells
- 1 taco seasoning packet
- 1 and ½ cups shredded cheddar cheese
- 4 ounces cream cheese
- cilantro and lime wedges for garnish, optional
Get Recipe Ingredients
Heat a large skillet over medium heat. Add the olive oil and onion. Sauté the onion until translucent.
Add the beef to the skillet and use a spatula to break up the meat while browning. Drain off any fat.
Add the garlic and saute for 30 seconds. Add Rotel, enchilada sauce, beef broth, pasta shells and taco seasoning. Stir well, bring to a simmer and cover. Cook for 10-12 minutes or until the pasta is tender.
Stir in the cheddar cheese and cream cheese. Stir until melted. Serve with lime wedges and cilantro if desired.
