Cheesy Beef One-Pot Taco Pasta

It's everything we love about Taco Tuesday in one cozy pot, and it's ready to serve in less than an hour!

Ingredients

  • 1 tablespoon olive oil
  • 1 cup onions, chopped
  • 1 pound lean ground beef
  • 2 cloves garlic, minced
  • 1 can Rotel, undrained
  • 1 can enchilada sauce
  • 1 and ½ cups beef broth
  • 8 ounces pasta shells
  • 1 taco seasoning packet
  • 1 and ½ cups shredded cheddar cheese
  • 4 ounces cream cheese
  • cilantro and lime wedges for garnish, optional

Instructions

  • Heat a large skillet over medium heat. Add the olive oil and onion. Sauté the onion until translucent.
  • Add the beef to the skillet and use a spatula to break up the meat while browning. Drain off any fat.
  • Add the garlic and saute for 30 seconds. Add Rotel, enchilada sauce, beef broth, pasta shells and taco seasoning. Stir well, bring to a simmer and cover. Cook for 10-12 minutes or until the pasta is tender.
  • Stir in the cheddar cheese and cream cheese. Stir until melted. Serve with lime wedges and cilantro if desired.
