Banana Oatmeal Pancakes (Blender Recipe)

Banana Oatmeal Pancakes are one of my favorite ways to use up those spotty bananas sitting on the counter on a Saturday morning. Instead of reaching for the flour canister, I grab the oats and the blender. These pancakes are soft and tender, lightly sweet from the fruit, with a warm hint of cinnamon and a little nutty richness from peanut butter. Everything gets blended into one smooth batter, so breakfast comes together with almost no mess. They’re also great for meal prep, so you can make a batch ahead and have an easy breakfast ready for busy mornings.

Ingredients

  • 2 small ripe bananas
  • 2 large eggs
  • ⅓ cup cottage cheese
  • ¼ cup unsweetened almond milk
  • ¼ cup peanut butter
  • 1 teaspoon vanilla extract
  • 1 and ½ cups old fashioned oats
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Instructions

  • Add all of the ingredients to the base of a blender. Pulse for 60 seconds or until the batter is mostly smooth. Let the batter sit for a few minutes while the skillet or griddle heats up.
  • Heat a skillet or gridle over medium heat. Once hot, add a small pat of butter or oil to the skillet.
  • Use a ⅓ cup measuring cup to portion out the batter. My skillet could fit 3 pancakes at a time or a griddle could cook six. This will make 9 pancakes. Cook in batches, and whip the skillet clean and add more oil and butter as you go.
  • The pancakes will take 3-4 minutes on the first side and you will see little bubbles as they begin to rise. Flip the pancakes and cook another couple minutes or until golden brown.
  • Serve warm with fruit and syrup.
