Fig and Cherry Energy Bites

Fig and Cherry Energy Bites are a perfect snack to add to your lunch for work, before the gym or anytime hunger might strike! With all natural ingredients these energy bites are a terrific alternative to processed energy bars!

Ingredients

  • 2 cups old fashion oats
  • cup honey
  • cup almond butter
  • ¼ cup figs, chopped
  • ¼ cup dried cherries, chopped
  • ¼ cup almonds, chopped
  • ¼ teaspoon cinnamon

Instructions

  • First chop figs, cherries and almonds. You will need to remove the small stem from the figs and chop into smaller pieces.
  • Add all chopped nuts, dried fruit and old-fashion oats, to a bowl.
  • In another small microwaveable bowl mix together honey, almond butter and cinnamon. Microwave for 20 seconds to get mixture very runny to stir in well with dry ingredients.
  • Pour honey mixture over oats and use a spatula to mix together ingredients.
  • Get your hands a little sticky and start forming small ping pong sized balls with your hands. *I’ve found damp hands work best.
  • Once energy bites are formed (you will get 12-15 depending on size) store in air tight container on counter for 5-7 days. Or freeze them for up to 3 months.
