Strawberry Shortcake Overnight Oats

Ingredients

  • 1 and ½ cups almond milk
  • ½ + ⅓ cup Greek yogurt
  • 3 tablespoons agave syrup or honey, divided
  • 1 teaspoon vanilla extract
  • ¾ cups strawberries, finely chopped
  • 2 cups old-fashioned oats
  • 2 teaspoons chia seeds
  • pinch salt

Instructions

  • In a large bowl mix the almond milk, ½ cup of Greek yogurt, 2 tablespoons of agave syrup and vanilla extract.
  • Chop the fresh strawberries and add them to a small sauce pan over medium heat. Drizzle the remaining 1 tablespoon of agave over the strawberries. Use a spoon to stir frequently. The heat will make the strawberries begin to break down and release their juice. Cook for 5 minutes, just until softened and juicy and remove from heat to cool.
  • Add the oats, chia seeds and salt to the milk mixture and stir to coat.
  • To assemble the overnight oats add a spoonful of Greek yogurt to the bottom of 3 small mason jars, followed by a spoonful of strawberries. Next portion out the oat mixture into the containers and top with remaining strawberries.
  • Secure the lid on the containers and refrigerate for 4 hours or preferably overnight. These are best eaten within 3-4 days.
