Homemade Eggnog Latte (Low Calorie & Low Sugar)

A Homemade Eggnog Latte is a festive holiday drink.  My lighter version of eggnog has the same flavor with less sugar and calories than the traditional recipe.  Add a little liqueur for an extra dose of holiday cheer!

Ingredients

Eggnog

  • 1 cup almond milk (unsweetened plain)
  • ¼ cup heavy cream
  • ½ teaspoon vanilla extract
  • 1 tablespoon stevia
  • teaspoon nutmeg, plus extra for dusting
  • pinch salt
  • 1 egg yolk

Latte

  • 1 cup espresso or strong coffee
  • 2 ounce liquor of choice, brandy, rum or whiskey (optional)
  • 1 ¼ cup eggnog
  • whipped cream
  • garnish with a sprinkle of nutmeg

Instructions

Eggnog

  • In a small sauce pan over medium heat add almond milk, heavy cream, vanilla extract, stevia and salt. Whisk together and continue to stir frequently while mixture comes to simmer.
  • While mixture is warming separate an egg yolk from egg white into small bowl. Discard white and whisk egg yolk till smooth.
  • When milk mixture is warmed and beginning to come to slow boil, turn down to low. Temper egg by spooning 1 spoonful of milk onto yolk while whisking. Repeat process a few more times by adding a spoonful while wisking. Then add yolk to milk and continuously whisk. Bring back to a simmer.
  • Mixture will still be thin. Remove from heat and transfer to a mason jar or other heat safe container to cool till thickened or use in latte right away.
  • Eggnog will thicken slightly once cooled.

Eggnog Latte

  • Add espresso to glasses. Add shot of spiced rum (optional).
  • Mix in eggnog. Top with whipped cream and a dusting of nutmeg.

Notes

*You can completely chill eggnog and serve cold or leave warm for latte.  
*The eggnog recipe can be made ahead and stored in an air tight container in the refrigerator for 3-4 days.
*Calories are based on 1 latte without alcohol or whipped cream since that is optional.
