Healthier Walnut Pumpkin Bread

This healthier pumpkin walnut bread is the perfect lightened up treat, with just a hint of sweetness but still moist and delicious.  This recipe is perfect anytime for breakfast or a snack with a cup of coffee.

Ingredients

Dry Ingredients

  • 1 cup oat flour
  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon allspice
  • ½ teaspoon ginger

Wet Ingredients

Instructions

  • Preheat oven to 350 degrees.
  • Spray 9 x 5 loaf pan with cooking spray and set aside.
  • Blend oats to make oat flour in food processor.
  • In a bowl mix together all dry ingredients oat flour, whole wheat flour, all purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, allspice and ginger.
  • In another large bowl add wet ingredients, pumpkin, eggs, avocado oil, yogurt, vanilla and maple syrup. Mix well.
  • Add dry ingredients to wet slowly while stirring with a spatula. Mix until all flour is incorporated being careful not to over mix.
  • Once everything is incorporated pour bread batter into prepared loaf pan.
  • Bake in preheated oven for 45-50 minutes checking for when a toothpick comes out clean.
  • Let cool for a few minutes before slicing. Enjoy!
