Preheat oven to 350 degrees.
Spray 9 x 5 loaf pan with cooking spray and set aside.
Blend oats to make oat flour in food processor.
In a bowl mix together all dry ingredients oat flour, whole wheat flour, all purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, allspice and ginger.
In another large bowl add wet ingredients, pumpkin, eggs, avocado oil, yogurt, vanilla and maple syrup. Mix well.
Add dry ingredients to wet slowly while stirring with a spatula. Mix until all flour is incorporated being careful not to over mix.
Once everything is incorporated pour bread batter into prepared loaf pan.
Bake in preheated oven for 45-50 minutes checking for when a toothpick comes out clean.
Let cool for a few minutes before slicing. Enjoy!
