Ingredients

  • 12 peppadew peppers
  • cup goat cheese
  • 1 tablespoon panko crumbs
  • 1 tablespoon balsamic glaze

Instructions

  • Rinse peppers of pickling liquid and pat dry with a paper towel and clean out any remaining seeds.
  • Fill a pastry bag or sandwich bag with goat cheese and squeeze with hands to make pliable. If using a sandwich bag, cut small hole at corner of bag.
  • Squeeze goat cheese into peppers, filling slightly above top of surface.
  • Sprinkle the tops of peppers with panko crumbs and place on a baking sheet.
  • Place baking sheet under preheated broiler rack for 2-4 minutes, watching carefully to simply melt cheese and toast panko. Watch closely to not burn.
  • Remove from oven and drizzle with balsamic glaze. Serve immediately!

Notes

The peppadews can be stuffed ahead for a party a day in advance.  Add the panko before placing in oven to keep crispy.
