Healthy Chocolate Baked Oats

f your morning toast seems kinda drab try mixing up this quick chocolate baked oats recipe. It tastes like a rich chocolate cake that you get to eat for breakfast! Made with healthy ingredients chocolate baked oatmeal is a wholesome breakfast.

Ingredients

  • 2 overly ripe bananas, mashed
  • 1 egg
  • 1 cup almond milk
  • 3 tablespoons coconut oil, melted
  • cup honey
  • 2 teaspoons vanilla extract
  • 2 cups old fashion oats
  • ¼ teaspoon salt
  • ¼ cup cocoa powder
  • ¼ cup chocolate chips

Instructions

  • Preheat oven to 375 degrees. Spray 8x8 baking pan with cooking spray.
  • In a large bowl mash the bananas with a fork.
  • Add the egg, milk, coconut oil, honey and vanilla extract. Stir well to incorporate all ingredients.
  • Add the oats, cocoa powder, salt and chocolate chips.
  • Stir well and use a spatula to scrape oat mixture into an 8x8 baking dish.
  • Spread evenly into dish and place in preheated oven. Bake for 25 minutes or until oatmeal is set and no longer runny.
  • Allow to cool for 10 minutes before serving. Top with additional chocolate chips, fresh fruit or milk.
