Healthy Oatmeal Breakfast Cookie

Healthy Oatmeal Breakfast Cookies are a quick and healthy breakfast recipe that also makes a great snack!  These are perfect to grab on your way to work or keep in your purse when you have afternoon munchies.  These breakfast cookies are made with healthy ingredients, oats, whole wheat flour and nut butter to keep you satisfied without the guilt!

Ingredients

  • 1 cup old-fashion oats
  • ½ cup whole wheat flour
  • 1 teaspoon baking powder
  • ¼ teaspoon cinnamon
  • teaspoon ginger
  • teaspoon cloves

Wet Ingredients

  • cup almond or peanut butter
  • ¼ cup honey
  • 1 tablespoon coconut oil
  • ½ cup unsweetened applesauce
  • ¼ cup coarsely chopped pistachios
  • cup chopped dried figs
  • 1 tablespoon flaxseed

Instructions

  • Preheat oven to 350. Line cookie sheet with parchment paper.
  • Combine dry ingredients oats, whole wheat flour, flaxseed, spices, baking powder and salt and stir to combine.
  • In another bowl mix together wet ingredients nut butter, honey, coconut oil, and applesauce. Stir well.
  • Chop pistachios and figs and stir into wet ingredients.
  • Mix wet and dry ingredients together. Drop cookies on parchment lined cookie sheet with spoon or cookie scoop. Use a fork to press down to flatten. Should make 16 small cookies.
  • Bake in preheated oven for 10–12 minutes watching closely to not over bake.
  • Remove from cookie tray and cool on wire cooking rack. Eat right away or store in an airtight container. Cookies are best eaten within 2-3 days.
