- 10 tablespoons butter, melted
- 2 10 ounce packages mini marshmallows
- 1 teaspoon vanilla extract
- pinch of salt
- 9 cups rice cereal
- 1 ½ cups chocolate chips, divided
Prepare a 13x9 inch pan with parchment paper slightly overlapping sides. Spray lightly with cooking spray and set aside.
Melt butter in a large pan over medium high heat.
Add marshmallows to pan and stir until completely melted.
Remove from heat and stir in vanilla extract and salt. Add in cereal.
Stir until cereal is completely coated with marshmallow. Allow to cool for 5 minutes before adding 1 cup of chocolate chips.
Chocolate may melt slightly but that is okay. Stir and pour into prepared pan.
Sprinkle remaining chocolate chips over top, pressing gently with spatula.
Leave on counter for 1 hour for Rice Krispies Treats to set up. Lift with parchment and set on cutting board. Use a sharp knife to cut into 20 bars.
Store on countertop. Do not refrigerate.
